  1. I believe Albumin is also a storage protein. I'm unaware of its function as a transport protein. Do you have a reference for this?

  3. Ok, so the category is different classes of proteins and albumin and casein are the same class. We're still at 4

  5. We are good on the categories; however, I should have more closely analyzed the enzyme in wheat. Gliadin is NOT an enzyme, its referred to as a prolamin which is another type of storage protein. We're still at +4.
