I believe Albumin is also a storage protein. I'm unaware of its function as a transport protein. Do you have a reference for this?

You're correct Albumin is a storage protein. I misread the information that I had looked up. I've edited the picture.

ReplyDeleteI was able to find a fifth distinct protein class. Let me know if this is acceptable.
ReplyDeleteWe are good on the categories; however, I should have more closely analyzed the enzyme in wheat. Gliadin is NOT an enzyme, its referred to as a prolamin which is another type of storage protein. We're still at +4.
